The Swiss FoodTech pioneer in clean label plant-based meats presents its latest culinary innovation: planted.steak, which is now available in numerous restaurants in Switzerland.
Planted has developed its first plant-based steak, which is juicy and tender due to an innovative fermentation process and has umami flavor. The company aims to create diverse product concepts as possible based on its pioneering Whole Muscle platform, where the muscle is grown through proprietary fermentation processes. This culinary innovation is made exclusively of natural ingredients, such as soy protein, rapeseed oil, bean and rice flour and a special blend of microbial cultures, aligning with the company’s philosophy. It has a high protein and fiber content, contains important micronutrients such as vitamin B12 and iron and is low in saturated fat. Furthermore, planted.steak is not only a culinary innovation, but also a sustainable solution, as the production of planted.steak results in 97% less Co2 emissions per kg compared to its animal-based counterpart.
Planted’s plant-based steak is a trailblazer in the industry. Lukas Böni, co-founder and member of the management board of Planted, elaborates: «No other plant-based steak uses only natural ingredients, no additives and is characterized by such juiciness and tenderness. During the research and development process, we worked with more than 50 gastronomy professionals to develop a steak that is literally unreal, in taste, texture, application and overall eating experience. We are very proud that so many restaurants have already added it to their menus.»
Plant-based meat in Zurich restaurants
The planted.steak is now on the menu in many European restaurants, among them various restaurants in Zurich, including: Gartenhof, Kronenhallem Lindenhofkeller, StudioBellerive in the AMERON Bellerive au Lac, NOA Restaurant Bern, Café de Prélaz and KJU.
“Fulfilling very demanding culinary requirements, the planted.steak allows us chefs to focus on what we are best at: creating and sharing emotions”, says Peter Shärer, Execitive Head Chef of the renowned restaurant Kronenhalle in Zurich, “the planted.steak reacts beautifully to different cooking styles, already delighting and surprising our guests.”
With a similar consistency akin to traditional steak, Planted’s planted.steak offers a unique alternative, providing a delightful culinary experience.
